What if you didn't care that much about frame rate, bird eye af, battery life, etc.

I'm not a Canon shooter, but if I were, I'd try to find a used EOS 5DS R. It's 50MP and is currently sharing the "King of Cameras" crown with the Nikon D850 over at Photography online. Henry's in Canada has a used body (8+) on sale for $2100 CDN

That was/is a great camera, as is the 5D Mark iv, alas with Canon I have committed to the RF mount so that would be a step backwards for me.

Ah! Sorry, Bill...I'm clearly not a Canon shooter - I have enough trouble trying to keep on top of the various permutations of my Nikon lenses.....
 
If you were to ask me I'd say go to an Olympus M1 iii or, for less money a M5 iii, but you didn't ask me. You came to a forum where most people use Nikon gear and a few are Sony users, so you'll get recommendations for those brands. There aren't many Canon shooters here so the recommendations for Canon gear are going to be scarce, try the Canon forum on DPReview
 
If you really really cared about image quality under good light and shooting conditions, really liked mirrorless, and didn't worry that much about bird eye AF, frame rate, buffers, battery life, high speed memory cards, etc. would some non-flagship cameras be just as good as flagship cameras?

I shoot Canon but I'm interested in every brand you want to bring up. I'm hoping for something like the EOS R mark ii, if it ever becomes reality. Something around $2500 that I'd hope would be tops in IQ with around 30 megapixels but not necessarily other features. Would/could a camera at this level equal the image quality of a flagship?
In good light and a stationary subject - Nearly any camera will do a good job.
Better cameras help in lower light and moving subjects.🦘
 
I went from the Sony A7R3 to A7R4 to A1. DXOmark actually rates the A7R3 sensor higher (100 vs 99 vs 98). This is fine for landscapes. However I couldn't take birds-in-flight until I got the A1. I sold the A7R3 and just use the A7R4 as a backup for the A1. I suppose I could use the A7R4 for landscapes.
 
At least with Nikon and Canon the flagship cameras are designed for the needs of sports photographers and they are not the best for wildlife photography. These sports oriented cameras have always put both shooting speeds and post processing requirements ahead of image quality. Even now with the D6 and Z9 cameras there are special tech papers for sports photographers only. Sports photographers do not need high resolution cameras as the larger image files only slow down their workflow and there is not much need for rendering details with photos of a soccer player or a motorsports car.

The Z6 is slightly under your target of 30 MP and the Z7 is slightly over your target. Both are excellent cameras and probably could find a used Z6 for (guess) $1500 and Z7 for (guess) $2200-2400.
 
The first camera I thought of when I read your post was the Z7. If you're not doing heavy action work, it's a heck of a good choice. In fact, if tomorrow I decided to go out and do some macros or landscapes, I'd reach for the Z7 (the MKii in my case since I don't have the original Z7 anymore) and be done with it. Small, light, effective.

I bet less. I sold a mint Z6 in box with FTZ last year for $1200
 
My Z7 works well for the type of photography you are talking about. It produces solid images even at slower shutter speeds handheld. It's the camera I reach for for this type of image.
 
I guess the answer is cell phone....if I didn't care about IQ, etc.................

It's all good, but what are your thoughts? Can I equal the IQ of a flagship just by giving up some of the advanced features like bird eye focus, 2nd slot, high frame rate, etc. I'd rather keep with Canon, but could switch.

I have no idea about Canon. Many folks are happy with the Nikon mirrorless Z6's, Z6, Z50 and Zfc. But I waited until the Z9 to dive into mirrorless. My guess would be that user interface and color rendering would be differentiating factors. Regarding image quality, it appears that Sony, Canon and Nikon all offer viable options. I really don't know about products from other brands.

I drive a Subaru SUV, perfectly happy with the middle trim level and don't think I'm missing anything by not ordering the highest trim level, even though I could. I guess I'm looking for the camera equivalent to the that. Z9 looks like a real winner though.

Brief thread hijack....I drive a Subaru SUV as well - love it! I have the base trim level, even though I can afford the higher trim models as well, but either don't want or refuse to pay for the higher grade fuel required for some of the models. The only drawback I had was having to wait for a model to be built and shipped from Japan as I was probably one of the 10 or so people in Canada that wanted the base model. This was in 2018, I can only imagine the wait times now.....thread hijack over.
The Z9 looks to be very good, I'm waiting (and hoping) that Nikon brings out an APS-C version of it to replace the D500. This would be a mid trim level Subaru, probably.
