From reading this form I just realized you can adjust sharpening in camera for JPEGs. From the wealth of experience in this forum I was wondering what setting would be best. Nikon set it to 3. Should it stay there or should I crank it up a couple of notches.

I'd say leave it where it is unless reviewing your images suggests otherwise. It's easier to add a bit of sharpening to a jpeg in post than it is to remove excessive sharpening artifacts so unless a review of your jpeg images shows a very consistent trend of under-sharpening I'd leave it alone. Similarly if a good close inspection of your images shows evidence of frequent over-sharpening (e.g. bright or dark halos around high contrast edges) then I might back the camera sharpening down a notch or two.
 
I have had nikons from D70 through 80 90 7000 7100 7200 800 810 and 850 shooting thousands of weddings photos and always in JPEG and sharp at +9. Ignore those who say anything against it there is no problem and the rear screen is sharper too. Dont woos out at +7. You will get no halo or artifact .
