Intermediate kit for 3000-5000$

Good advice above if it's in the budget but for about 2 grand less you could swap the 500 PF for the 200-500 f/5.6. It's not as light but it's still a fine lens and if you don't have many other lenses to draw from the 200-500mm zoom range will be convenient for a wider variety of photo subjects.

Really hard to go wrong with either lens IMO and if you're interested in Nikon's lineup I'd definitely recommend the D500 for a very good crop frame camera which is the perfect way to start bird photography.
 
As others have suggested you won't regret your purchase of the Nikon D500 with the 500 f5.6 PF combination. The 200-500 f5.6 is equally good (but not on par with the 500 PF) for a low price lens but its heavy to lug around. As DR mentioned above you can't go wrong with either of the two.
