Looking for post-processing feedback

I took this image on a recent trip to Iceland. It was cloudy, raining a bit and the camera was not capturing what the eyes were seeing.

I have attached the edited JPG files below. This is edited using Capture One Pro (16.4.4.24)

I would like to know if I over edited and also if I could have captured this better with different settings (after I post the RAW file).

I don't have much to add, and only an opinion. It seems that the most saturated part is the water middle and right. If that area is intended as the area of emphasis that would make sense, but I don't think it is, so I would look at whether you cranked that up too much. What is the area of interest? Overlapping and large in the midground are the 3 rocks, but there isn't much contrast within the rocks or between the rocks and the area behind, so maybe lighten the rocks and darken the mountain?

The rock on the far left edge of the frame seems to be cut in half, considered bad by some, and it competes for the eye, so I guess I would crop it away and leave the left edge past where the green of the mountain begin so it would be totally gone.

I agree with Bill's observations above. It's not just the saturation of the open water but it's overall brightness which tends to pull the viewer's eyes that way. I'd also say you may have pushed the sharpening a bit too far with that bright halo around the main skyline rock formation.
