Question for the pano pros

This may seem a dumb question but I’ve no experience on this so may have a boat load of misconceptions. If I did a pano to end up as a portrait shot could this be used to get a result like focus stacking with a massive DoF? I imagine there would be a limited number of situations this would work, but if it did it would be like focus stacking a medium format camera.
 
Not sure I understand what you're asking. Are you asking about a pano-like image using multiple shots to compile a larger image and then focus stacking that larger image? If so, I think it could be done with a static subject. Multiple shots stitched at one focus point then a second set stitched at a different focus point, then a third and so on. It would take lots of shots and a lot of computer.

It's your latter guess - shot, move down a bit and refocus shot, and so on, all being done in landscape. My guess 10-15 shots and I think people are doing that on the traditional long panoramas. Certainly a lot of RAM needed.
