As Patrick said…you can assifg RSF Hols and the button is press to engage and press to go back. But you’ve only got a single RSF Bold per bank so the others you will need to hold the button.

If you have different focus modes assigned to each Fn1, Fn2, and Fn3......then yes, you need to hold the desired button when photographing unless you have set up a Recall Shooting Function (RSF).
