This image looks way oversaturated on this site. The original is not.

Looks pretty soft/out of focus with some motion blur and a weird post-processing effect where it looks kinda like a painting. Also, 1/100 is pretty slow. Try a much faster shutter speed next time and try to get the birds eye in focus.
 
As stated above, the camera data this site grabbed says it was a D500 body with a 200mm lens. But your header says it was a D850 body with a 600mm lens. Thoughts as to the discrepancy? Could this be why you say original looks different (because in fact it is a different image)? Just thinking out loud...
 
Yeah, high contrast and overprocessed. Was this a big crop? The EXIF does not agree with the info you provided.
All of my lenses are manual focus Nikkors. I honestly can't be bothered changing the CPU settings each time I change lenses, which is often because I prefer primes over zooms

As I said above, all of my lenses are manual focus Nikkors and usually don't bother changing the CPU lens data as I change lenses frequently. It is not something I consider important.
