I have the epson p900 and just love it. Some of my favorite papers are canson platine, Hanuemule photo rag ,and Epson’s legacy platine. You can buy sample packs of different papers from all the companies and this is a great way to see what you like. The variety of papers types can seem overwhelming but I quickly realized what I like. These papers do cost more than some of the others. I keep epsons premium matte and a cheaper luster paper on hand for just making test prints to dial in the finished print. As for best paper? There is no best paper, it’s entirely subjective and a personal choice. I also print from the epson layout app and of Course use the paper profiles. The exception is I’ve had great success with b and w using epsons advanced b and w modes. I don’t color calibrate my monitorit’s an apple display , I do dial down the brightness though and do use the proofing options in LR and PS. After a few prints you get an eye for adjustments you need to make to an image to get it to print to how you want it to look.
